Spanakopita

I love Greek  food , anything from moussaka, tiropita, saganaki,  Greek salad , gyros, etc . I had my first taste of  Greek food at Greek Islands in Omaha. I had spanakopita and this was a tasty way to eat spinach. Spanakopita ( also known as spanakotiropita) is a savory spinach cheese ( feta typically)  pie in a phyllo pastry. We took a look at a few recipes and made our own version which was quite tasty . This was Rich’s creation. 




Ingredients :
Spinach frozen ( chopped)  -10 oz package
Onion- 1 medium - chopped 
Dill-  1/4 cup chopped 
Feta cheese- 1.5 cup
Ricotta cheese -1/2 cup
Garlic -  1 clove
Egg - 2
Salt -1 tsp
Pepper - 1 tsp 
Olive oil - 3/4 cup 
Phyllo  - thawed - 6 sheets 
Rich used his new prep deck to prep all the ingredients 




Instructions: 
1. Preheat oven to 325 F
2. Thaw the spinach and squeeze out all the water
3. Place a sauce pan on medium heat and add 2 tbsp of olive oil 
4. Sauté the onion until translucent. Add minced garlic and sauté it 
5. In a large bowl mix the spinach, onion and garlic together 
6. Add two eggs to the bowl, feta and ricotta cheese , chopped dill, salt and pepper and mix well together 





7. Take a 9x9 baking sheet and lightly coat it with olive oil. Place two sheets of phyllo dough in the pan 
8. Generously coat the phyllo dough sheet with olive oil



9. Add the spinach mixture and spread it across evenly


10. Then place 4 sheets of phyllo ( one sheet at a time) over the spinach mixture


11. Coat the top of the phyllo dough sheet generously with olive oil 
12. Fold the edges of the phyllo dough sheets into the pan and tuck into the sides 
13. Bake at 325 F for 50 minutes 
14. Take the spanakopita out and let it cool down 


15. Cut into squares and serve
